Does anyone have any good low cal eggplant recipes? I am looking for something simple without alot of ingredients. ThanksEggplant recipes?
LOW CALORIE EGGPLANT
1 eggplant
1 onion
1 tbsp. butter
Lg. can tomatoes
Peel and cut up eggplant; boil about 15 minutes (like squash) or until done; drain. Saute onion in butter. add drained tomatoes, stewing into a sauce like consistency. (Add cubes of cheese if you wish.) Put eggplant into greased casserole; add stewed up tomatoes. Put cheese or buttered crumbs on top and bake 15 to 20 minutes in 350 degree oven.
EGGPLANT PARMEGIANA WITH MEAT
1 lg. eggplant
Onion
Mozzarella cheese
Jar of spaghetti sauce
1 1/2 lbs. chopped meat
Parmesan cheese
Salt, pepper, and garlic salt
Cook meat to which chopped onion and salt and pepper and garlic salt is added. Drain and put aside. Peel eggplant and slice thin. Barely cover bottom of 9 x 13 inch pan with sauce. Add layer of eggplant, cheese, and meat (it is best to add all meat in this layer); repeat. Sprinkle Parmesan cheese on top. Bake at 350 degrees for 45 minutes. (Takes this long because eggplant is not cooked before hand.)
Can be made low calorie by using skimmed milk cheese, low calorie spaghetti sauce, and substituting turkey for beef.Eggplant recipes?
Eggplant (Aubergine) Parmesan:

1-2 eggplant slices
1 eggplant, washed and sliced into 8 1/2 inch slices, i use the nicer ones from the center and work my way out..
2 cups mozzarella-parmesan cheese blend
1 egg
1/2 cup milk
1 1/2 cups breadcrumbs, seasoned with garlic powder
salt
pepper
1 cup olive oil
2 cups spaghetti sauce
cooked pasta
1. preheat oven to 350 degrees.
2. mix egg and milk together in bowl, blend.
3. heat olive oil in med frying pan.
4. dip eggplant slices into egg/milk mixture.
5. dip eggplant into breadcrumbs.
6. place 4 slices at a time, into olive oil in frying pan.
7. fry eggplant on each side, until each side is golden brown (you want them crispy, not mushy).
8. remove eggplant from skillet, and place on paper towels to drain excess oil.
9. repeat dipping and frying process with other 4 eggplant slices.
10. place 1/2 cup spaghetti sauce into 9x13 casserole dish.
11. place eggplant into bottom of casserole.
12. pour spaghetti sauce over top of eggplant.
13. sprinkle mozzarella/Parmesan cheese over top of spaghetti sauce.
14. bake in 350 degree oven for 30 minutes or until cheese is melted.
15. serve over pasta if desired.
Well eggplant lasagna is very tasty and healthy.All u do is layer ,first grease the baking pan with olive oil and then layer the eggplant cut on circles and then after that tomato pure and then some cheese on top of the tomato then again a layer of eggplant and then again tomato and cheese on top of that put some basil leaves on top and bake it...well u can use your imagination and layer whatever you like.
if you have a grill , grill some sliced eggplant red onions, squash, zucchini with a little bit of olive oil,or any spray oil, on the side make yourself a simple dressing 1 tsp mustard, 1/4 cup of red vinegar, lemon juice to taste,parsely/basil, salt pepper, when all the vegetable are done about 4 minutes , diced them add the dressing and some feta if you'd like, also can be done in a 400 oven for +-10/15 minutes, you makeit with any veggies of your choice its called ratatouille
Cut the eggplant into cubes and lightly cook in a non stick pan, add some grated carrots, zuchinni, cook until tender, add a dash of white wine.
