For grilling just add a little olive oil, salt and pepper for taste, you can also add lemon juice with garlic.

Here's another recipe that I love to make at least once a week:

Ingredients:

1 eggplant (cut into cubes)

1 1/2 cup of lettuce (chopped)

1 crushed clove of garlic (or 1/2 tea spoon of garlic powder)

1/2 lemon juice

1 1/2 cup of yogurt ( or 4 small packs)

salt and pepper

Directions:

Fry the eggplants until they turn gold, bring a glass pan and put them in there, then put the lettuce on top, then mix the yogurt with the lemon juice, garlic, salt and pepper in a blender, mix well then pour on top of the lettuce,

Enjoy~

mix some melted butter, garlic, salt and pepper,a touch of chilli pepper, and 1/3 cup woshtishier sauce together.slice yur eggplant into 1'; slices(dont peel it) put in container and merinade all day. tonite just throw them on yur grill and cook them till they get done
slice and brush olive oil , kosher salt then grill I do this with all squash, and vegetables
Keep it simple. Clean and cut eggplant into 1'; thick slices. Make a compound butter mix to brush on slices and place on preheated grill medium heat. brush up side before flipping. About 2 minute to a side should do the trick. Compound butters are easy to make. For eggplant, I would suggest 1 tsp lemon juice, 1tsp each: dried sweet basil, oregano, and coriander to one stick of butter. Mix into softened butter well and spread on to eggplant or melt and brush it on. Spreading it on distributes to herbs more evenly. add salt and or pepper to taste after grilling.
