Eggplant to me an exiotic food and i dont know why it seems that you can prepare it several ways.If you like send your favorite eggplant recipe.Anyone have a good eggplant sandwich recipe or just any eggplant recipe?
Linguine with Eggplant
1 pound linguine
2/3 cup olive oil, divided
2 small eggplant, cut into 1/2-inch chunks
3/4 teaspoon garlic powder
1/2 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon pepper
4 plum tomatoes, chopped
2 tablespoons fresh parsley, chopped
In a large pot, cook the linguine as package directs; drain well. Place linguine in a large bowl and toss with 2 tablespoons olive oil; set aside.
In the same pot, heat the remaining oil over medium-high heat. Saut茅 the eggplant for 10-12 minutes, until lightly browned. Add the garlic powder, oregano, salt, and pepper and saut茅 for about 5 minutes more. Add the tomatoes, parsley, and linguine and toss gently until heated thru. EASY EGGPLANT,
If you have a George Forman type grill (mine is a GE knock-off), get it really hot, preheated.
Slice the eggplant into 1/2'; slices, thinly coat with olive oil.
Put into the hot grill, let cook til soft and grill marks are present. Salt to taste.
It is so succulent and tasty!
For a sandwich, after cooking the eggplant, coat two halves of a bun with olive oil, put on the hot grill and let get a bit crispy. Put the eggplant on the bun (add some cheese, lettuce, tomatoes if you like, I like mine plain) and enjoy.
I do the same thing to make EGGPLANT PARMESON. I don't let the eggplant get too soft. Take it off the grill, put on heat proof casserole dish, put a little marinara sauce on it, some slices of mozzarella, and put under the broiler until the cheese melts.
This also makes a great sandwich, particularly if you toast or grill the bun to make it a bit crispy.
Easy and yummy!!!!
Fried Parmesan Eggplant
Fried eggplant strips with seasoned cornmeal coating, topped with Parmesan cheese. Serve these eggplant strips with a little marinara sauce on the side, if desired.
INGREDIENTS:
1 eggplant (about 1 pound)
1 teaspoon salt
3/4 cup cornmeal
1/4 teaspoon white pepper
1/8 teaspoon garlic powder
vegetable oil
1/4 cup grated Parmesan cheese
PREPARATION:
Peel eggplant, and cut into 2- x 3/4-inch strips; sprinkle with salt, and let stand 30 minutes. Pat dry. Combine cornmeal, pepper, and garlic powder. Dredge eggplant in cornmeal mixture, and fry in deep, hot oil (375掳) until golden brown, cooking only a few at a time.
Sprinkle with Parmesan cheese.
Serves 4 to 6.
I have eggplant about ready in my garden if the ground squirrels don't eat them, like they are eating my beats.
EGG PLANT AND BEEF SUPREME
1 med. egg plant
1/2 stick butter
1 lb. ground beef
1 tsp. instant onion
1 tsp. salt
1/8 tsp. pepper
1 tsp. sugar
1 can tomato sauce
1/4 c. grated Parmesan cheese
1/2 lb. grated mozzarella cheese
Slice egg plant and brown in butter. (Add extra butter if needed.) Place in shallow 2 quart baking dish. Brown meat as you add onion, salt, pepper and sugar. Spoon mixture over eggplant. Add tomato sauce and cheese. Bake uncovered for 20 minutes in 350 degree oven. Sprinkle remaining cheese on top and return to oven to melt.
