Do you have any easy eggplant recipes?

Me and my sister bought an eggplant yesterday when we went grocery shopping because we'd never tried it before...so what we're looking for is just kind of like a basic, easy recipe for eggplant. We appreciate it, thanks in advance.Do you have any easy eggplant recipes?
1/4 c. grated Parmesan cheese


1/2 c. cornmeal


1 med. eggplant (about 1 1/2 lbs.), pared and cut into 1/2 inch slices


1/2 c. butter, melted


1 can pizza sauce


1 c. (4 oz.) shredded Mozzarella cheese


2 tbsp. chopped parsley





Combine Parmesan cheese and cornmeal. Dip eggplant into butter, coat with cornmeal mix. Place into buttered 15x10 inch pan. Spread eggplant slices with pizza sauce. Combine Mozzarella cheese and parsley, sprinkle over pizza sauce. Bake at 400 degrees for 15 to 20 minutes. Makes 4 servings.Do you have any easy eggplant recipes?
FRIED EGGPLANT:





Peel and slice it into 1/2'; thick disks. Lay the disks into a colander and cover with a good spinkling of salt. Place the colander into the sink so the water will drain from them for about an hour. Rinse the salt from the eggplant disks and pat dry. (They will be dehydrated and floppy)





Then dip into the following...





Dip into flour, beaten egg, and then bread crumbs. (in that order!)





Once breaded, you now fry it in hot oil (canola, corn, safflower, peanut are all fine). Fry until slightly browned.





Serve with Marinara sauce, mozzarella %26amp; parmesan, and spaghetti or you can make my vegetable lasagne with it below...





EGGPLANT LASAGNE





Boil lasagne noodles and drain.


Place a scoop of spaghetti sauce in the bottom of a 9X11 pan.


lay down a layer of noodles, follow with a layer of fried eggplant, a layer of mozzarella cheese, a layer of ricotta cheese, a layer of sauce.





Repeat with a layer of noodles, fried eggplant, a layer of mozzarella cheese, a layer of ricotta cheese, a layer of sauce. and top with ricotta and mozzarella. Bake at 350 degrees until heated through...about 45 minutes to 1 hour.
Two ways, make squash casserole, only use the egg plant instead of the squash.


Two, slice into 1 inch rounds, brush with a SMALL amount of oil, sprinkle with a little salt and pepper, and put in the oven on 350 or in a pan on the stove and cook till golden brown. while in the oven slice a tomato and mozzarella cheese, Take the pan out of the oven and top with the tomato and cheese and sprinkle with chili powder, put back in oven until cheese is melted. My dad used to make this when I was little and I LOVED it.
Here's my favorite;


Peel the skin off the eggplant. Some people might like it on, but its a little bitter.


Dice the eggplant up in about 1 inch squares.


sprinkle with a little salt and let it drain in a colander for a half hour in the sink.


2 medium sized diced tomatos


1 diced bell pepper (any color)


1/2 cup onion


Heat up a skillet with a little bit of oil


Dump in all the veggies including the egg plant.


Cook till its soft.


Then spread it over a loaf of french bread thats been sliced in half. Top with grated jack cheese or grated parmesean. But it in the broiler on the low setting till the cheese melts. Then cut it to however much you want.
Slice 3/4 inch thick long slices, dip in lightly beaten egg white, then roll well in real seasoned bread crumbs, salt and season lightly Italian style, bake at 375 on cookie sheet until cooked well and browned, turn over after about 20 minutes, eggplant should be soft mushroom consistency and darker in color. Work fast since eggplant turns brown after cut. Tastes good with spaghetti sauce, pasta, etc.
Slice thinly like chips, salt lightly and put on a oiled tray in the oven at high heat. Cook until slightly brown. Put them on a salad with a light vinaigrette, as a sandwich-meat substitute, or on some pasta.

Peel and slice it.


dip into egg, then coat with flour (season with sal and pepper)


fry in skillet


You can have it with any side dishes, like rice.
