eggplant lasagne's good, use it instead of the pasta for the layers :) zucchini cookies are a good alternative to carbs too :) remember if you're eating no carbs then you can eat fat and loose weight because its carbs that make it stay in the body :)What are some low fat, low carb EGGPLANT recipes??ANY nationality recipes pls?
';Eggplant centers are cooked with onion, garlic, and seasonings, then re-stuffed into the eggplant, coated with tomato sauce, cheese, and bread crumbs, and baked until tender and bubbly.';


INGREDIENTS:


2 tablespoons olive oil


2 medium eggplants, cut in half


lengthwise and hollowed out to


1/4 inch flesh rim


1/2 cup chopped onion


2 cloves garlic, crushed


1 teaspoon dried oregano


freshly ground black pepper to


taste


1/4 cup grated Parmesan


cheese


1/2 cup bread crumbs


1 teaspoon chopped fresh


Italian parsley


2 cups tomato sauce


1 cup shredded mozzarella


cheese


DIRECTIONS:

Preheat oven to 325 degrees F (165 degrees C).

Heat olive oil in a large skillet over medium high heat. Roughly chop eggplant centers, and add to pan with onion, garlic, oregano, and pepper. Cook and stir until lightly browned. Spoon mixture back into eggplant, and sprinkle each with Parmesan cheese, bread crumbs, and parsley. Place in a shallow baking dish, and cover with tomato sauce and mozzarella cheese.

Bake in the preheated oven for 30 minutes, or until eggplant is fork-tender and cheese is bubbly. Serve immediately.
Eggplant tortilla


1 whole eggplant (preferably Asian long eggplants) roasted on the grill until soft, stem intact for easy handling (you can cut this off after frying)


1 egg, beaten, salt added to taste (you can use just the white)


1 tbs. cooking oil


Peel the eggplant by pulling the skin off. Lay on a plate and use a fork to flaten the meat. Dip in egg and fry until golden brown. Serve with your favorite dipping sauce (soy sauce, ketchup, chili sauce, oyster sauce)
We love this recipe. We normally just bake it like a meatloaf unless we're having special company and want to present it in the skins.





STUFFED EGGPLANT


2 medium eggplants 鈥?halved lengthwise %26amp; steamed 10 minutes


陆 c chopped onion saut茅ed


1 t salt


鈪?t pepper


录 C Parmesan, Asiago or Romano cheese


1 lb meatloaf mix 鈥?coarse ground %26amp; cooked in 1 T butter


1 egg -- beaten


bread crumbs





Scoop-out eggplants %26amp; chop body, combine ingredients except bread crumbs %26amp; either refill eggplant shell or form into small individual meat loafs. Top with bread crumbs. Bake in 375掳F oven for 30 minutes. Serve with marinara sauce.
EWW...I'd rather not eat than get served a lowfat/lowcarb EGGPLANT recipe!! What's the point of eating if u subject urself to restricted ways of eating? Just eat in moderation and exercise to burn extra cals! I would be a sad person if I limited myself to bland boring foods....Good Luck w/the crash diet. Just so u know, when u crash diet like that, u deprive ur body of important vitamins like Vitamin D. Ur actually robbing ur bones of nutrients and later on in life u'll get brittle bones, osteoperosis, and ur health in general with cut years of ur life. U might not care now but when ur older and can feel the effects in ur bones, u'll regret it.


Try exercising and keeping a fit body all yr long instead of just spring break
The best thing is to go on the food network on your computer and ask that very same question. They have very good answers for those questions. There is a on-line group called skinny cow.com It helps you figure the write way to eat and not feel like your missing out on anything.
