BAKED STUFFED EGGPLANT
1 lg. firm eggplant
1 sm. onion, minced
1 green pepper, minced
1/2 c. butter
1/2 c. bread crumbs
1/2 c. grated cheese
1/2 tsp. salt
1/4 c. ketchup
Bread crumbs for topping
Remove stem from eggplant, wash and drop into boiling water for about 30 minutes. Drain and cut in half. Remove pulp leaving shell thick enough to prevent breaking.
Cook onion and green pepper in butter for 5 minutes. Add bread crumbs, grated cheese, salt and ketchup. Add the well drained eggplant pulp and pile lightly in the eggplant shells. Top with buttered bread crumbs. Place in a greased pan and bake at 350 degrees about 20 minutes.

EASY EGGPLANT DISH
1 eggplant, diced
1 yellow squash, peeled and diced
1 cup chopped onions
1 cup dry bread crumbs
1 tablespoon butter
1/8 cup canned sliced green chiles
1/3 cup crushed buttery round crackers
1/2 cup shredded mozzarella cheese
Preheat oven to 350 degrees degrees.
Bring a large pot of salted water to a boil. Add eggplant and squash and cook until tender but still firm, about 10 minutes. Drain and cool.
In a 2 quart casserole dish combine eggplant, squash, onions, bread crumbs, butter and chiles. Sprinkle crushed crackers and cheese over the top. Bake in preheated oven for 30 minutes.

Eggplant Parmigiana
6 Servings
2 eggplants, unpeeled, cut into 1/4-inch rounds
2 eggs, lightly beaten
1 1/2-cups breadcrumbs
1/2 teaspoon salt
1/8 teaspoon pepper
1 garlic clove, peeled and halved
3/4 cup olive oil
20 ounces canned tomatoes
1/3 cup tomato paste
2 tablespoons minced fresh basil
1 teaspoon salt
1/8 teaspoon pepper
1 cup grated Parmesan cheese
1/2 pound mozzarella cheese, thinly sliced
DIP EGGPLANT SLICES IN EGGS, then in breadcrumbs seasoned with salt and pepper. Refrigerate 20 minutes. In a large saucepan, saut茅 garlic in 2 tablespoons oil for 1-2 minutes. Remove garlic and add tomatoes, tomato paste, basil, salt and pepper. Cover and simmer 30 minutes. Preheat oven to 350F. Brown eggplant in 1/4-inch oil in a large skillet. Drain on paper towels. Put a thin layer of tomato sauce into a baking dish and layer eggplant, sauce, Parmesan and mozzarella, alternately. End with mozzarella on top. Bake, uncovered, for 30 minutes.

EGGPLANT PARMIGIAN
Eggplant, washed and unpeeled
Flour
Eggs, well beaten
Seasoned Italian bread crumbs
Vegetable oil
Tomato sauce
Shredded mozzarella cheese
Heat oil in skillet over medium heat. Slice eggplant into thin, round slices. Place flour, eggs and bread crumbs into three separate containers. Mix a small amount of water in container with eggs to thin-down the eggs slightly.
Dip each slice of eggplant first into the flour, then the eggs and then the bread crumbs to coat both sides. Fry breaded eggplant slices in skillet until browned on both sides. Drain on paper towels.
Spread tomato sauce on bottom of a baking dish. Layer the eggplant slices alternately with sauce in the dish. Spread shredded mozzarella cheese over the top. Cover with foil and bake at 325 degrees for 40-45 minutes
Oh you just came to the right place kiddo! I have excellent recipe for eggplant as I grow them. Clean eggplant, cut rind off, slice into 1/4-1/2 inch slices..soak for about half hour in salt water. Then coat with olive oil, dredge in Italian bread crumbs. Bake slices til almost tender. Layer eggplant with 5-cheese Italian mix, layer with miranara sauce..bake for about 45 minutes. Then put top layer of cheese til melted..EGGsalant! Also add spices to taste...basil, bell pepper, onion, etc..whatever ya like. Also forgot..make a mix of lean ground beef and italian sausage to add to marinara sauce.
