eggplant lasagna
2Qrt water (with one tsp salt)
1tsp cooking oil
1/2 pound lasagna noodles
1medium eggplant
1(6-ounce) can tomato paste
1 cup red wine
1/2 cup hot water
1 garlic clove,crushed
1tsp crumbled dry basil
1tsp ground turmeric
Salt and Pepper
10 black olives,pitted,chopped
1/2 cup grated Parmesan cheese
Heat salted water and oil to boiling.Cook noodles 12 to 15 minutes;drain.Arrange on platter.
Slice unpeeled eggplant crosswise into 1/4 inch rounds:fry both sides in heated oil until tender.(They cook quickly and absorb considerable oil, which must be added consistantly.)
Drain on absorbent paper.
Combine tomato paste,wine,water,garlic,basil,turmeric,s鈥?pepper to taste;simmer 5 minutes.Add green pepper and olives;cook 5 minutes.
Arrange layer of Lasagna in buttered shallow baking dish.Cover with a layer of eggplant slices and several spoonfuls of sauce;sprinkle with cheese.Repeat until all ingredients are used.Bake in preheated 350F oven 30 minutes.Yield 4 to 6 servings.

you could make babaganoosh:
roast the eggplant whole in the oven at about 200 degrees Celsius until soft - allow to cool, then peel the skin off, and chop the flesh into a fine pulp, mix with paprika, tahini, herbs, and lime juice to taste :)
cut it in thick slices then grill them in a hot grill for 1 minutes or 2,then dressing them with garlic,balsamic vinegar,olive oil,parsley,salt %26amp; pepper.
Try this eggplant soup. It hardly takes about 40-50 minutes to prepare and its healthy too. You could serve it up with some bread rolls and voila, dinner is ready!!!
INGREDIENTS
1 tablespoon vegetable oil
1 medium onion, chopped
1 pound ground beef
1 clove garlic, crushed
1 pound eggplant, diced
3/4 cup sliced carrots
3/4 cup sliced celery
2 (14.5 ounce) cans Italian diced tomatoes, drained
2 (14 ounce) cans beef broth
1 teaspoon sugar
1/2 teaspoon ground nutmeg
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup dry macaroni
2 teaspoons chopped fresh parsley
1/2 cup grated Parmesan cheese
DIRECTIONS
Heat the oil in a skillet over medium heat, and cook the onion, beef, and garlic until beef is evenly brown. Drain grease, and mix in eggplant, carrots, celery, and tomatoes. Pour in beef broth. Mix in sugar, and season with nutmeg, salt, and pepper. Cook and stir until heated through.
Mix macaroni into the soup, and continue cooking 12 minutes, or until macaroni is al dente. Mix in parsley. Top with Parmesan cheese to serve.
Bake ur eggplant in mv on medium for 4-6 minutes,prick the surface witha fork first.
Remove the skin and mash it.
Beat a cup of yoghurt till smooth, Add a dash of garlic, salt , pepper, a tsp of fresh lemon squeeze. Add green chillies if u like it chilly.
Add the mashed eggplant to this mixture. top with a tbsp or 2 of olive oil.
Eggplant Tempura (fried eggplant in batter)
Using cold water is a must. This keeps the batter from becoming sticky. When you add the flour, whisk quickly just to mix it in evenly. Sticky batter results in oily tempura.
1 egg, beaten
1 cup COLD water
2 tablespoons dry white wine
1 cup flour
Heat approximately 1/2 inch of oil in a large skillet until very hot. Dip the eggplant in the batter.
Place each piece flat in the hot oil and cook on medium to high heat for about 4 to 5 minutes on one side. Turn and cook another 3 minutes.
When done, remove to a cookie sheet lined with paper towels, and sprinkle with a pinch of salt.
This is the best..we usually just use some soya sauce for dip

you can try this, if you have 3 eggplant, make a scrambled egg of two, after scramble set aside for a while, boil your eggplant for a couple of minutes then after boiling remove them to the water and flatten each eggplant but try not to break its form, it should only get flatten,
then pour the scramble eggs to the three flatten eggplants, add salt(the amount depends on your taste satisfaction)
prepare a frying pan with a hot cooking oil in it, when ready cook the eggplants 1 by 1 only, but if your frying pan is big to accommodate at least 2 flatten eggplants then do so,
you don't have to overcooked the eggplant just see if the egg is cook enough for you. then its ready to serve.
mostly, when i'm doing this, i make additional ingredients, like boiled potatoes(tid bits) and grilled meat(a little amount only)(already boiled %26amp; cooked)
you could also add sliced onions while frying the eggplant.
