In most instances your eggplant doesn't have to be cured. If you do, slice your eggplant to the desired thickness, immerse in salted water overnight, dry the slices well and do what you intended with them.I have only been growing eggplant for the past three years. Not once have I cured them and the dishes have been terrific. Thanks for sending me GREAT recipes for eggplant, please tell me how to cure before cooking.?
