Anyone with Eggplant recipes?

So, i have had Eggplant a few times but it's been years ago. I was really never a fan. However, tastes change and I was wondering if anyone had some unique recipe ideas a could try.Anyone with Eggplant recipes?
My suggestion is to use eggplant like you would a piece of meat. I grill it, dice it and throw it into marinara, bread it and fry it, use it on a sandwich, and puree it into a dip (well, people don't typically do this with meat, but you get the idea). This way, you can tailor it to your tastes.





Do try the babaganooj suggested in the first answer, though.Anyone with Eggplant recipes?
I found this recipe on allrecipies.com. It is very good, we enjoy it im my household usuing eggplant grown in my garden. Now the stuffing can be dry but adding a little vegetable broth will fix that and i cut down the bread crumbs to 3 cups.





Summer Nights Eggplant





INGREDIENTS


2 large eggplants


1/2 cup olive oil for frying


2 medium onions, chopped


2 cloves garlic, minced


2 small tomatoes, chopped


1 green bell pepper, seeded and chopped


1 tablespoon chopped fresh parsley


salt and pepper to taste


4 cups dry bread crumbs


1 cup crumbled feta cheese





DIRECTIONS


1.Remove the leaves from the eggplants, and slice in half lengthwise. Carefully scoop out the centers of the eggplants, leaving a half-inch shell so they resemble 'canoes'. Cut the center portion into small pieces, and set aside.


2.Preheat the oven to 350 degrees F (175 degrees C).


Heat the oil in a large skillet over medium heat. Add the onions and garlic, and saute for a few minutes, until tender. Add the eggplant pieces, and cook until soft, about 5 minutes. Then, stir in the tomato, green pepper, and parsley. Simmer for about 10 minutes.


3.Remove from the heat, and transfer to a large bowl. Stir in the bread crumbs until evenly blended. Divide the mixture evenly between the four eggplant shells. Sprinkle feta cheese over the top. Place the eggplant halves on a baking sheet.


4.Bake for 15 to 20 minutes in the preheated oven, until the tops are browned and the cheese is melted. Serve hot or cold. I prefer them chilled
You didn't mention whether you're a vegetarian, omnivore, or vegan so I picked naturally vegan, traditional recipes for you to try. I have used the first 2 recipes. They are soooo damn good. I subscribe to those cooks via my youtube account. The last recipe I have never tried, but it looks delish =)

Ratatouille- which is a French eggplant stew. You can serve with rice, pasta, or toasted and sliced French bread.

Aloo Baigan- which is an Indian dish with eggplant and potatoes. Best served with Indian flatbreads and/or basmati rice.

You can sliced them and steam for 10 mins, drizzle olive oil and light soy sauce over it. Garnish with fresh chilli and spring onion.

Or, boil them in hot water till tender, then cut them lengthwise, scope the fresh out and mashed it (puree), add olive oil/shallot oil and light soy sauce.

Use them in curry! or in Chinese stir-fry ...
Try eggplant parmesan!! Its.... amazing, to say the least. I hate eggplant and I hate lasagna, but I LOOOVE eggplant parmesan!
Slice it into 1/2 inch slices. Soak them in salt water then coat with olive oil and cook them on the BBQ.
