Eggplant recipes,does any one have any?

we are going them and they will be ready soon. would love to have a recipe for stuffed or a casserole. isn't there one with shrimp in it a casserole?Eggplant recipes,does any one have any?
Escalloped Egg Plant





1 lg egg plant


2T butter


1 can mushroom soup


1/2 c bread crumbs


1 t sugar


3 T cheese, grated





Slice egg plant and soak in salt water. Drain and drop in boiling water. Cook until tender. Arranged in layers in a buttered baking dish, dot it with butter and pour can of mushroom soup over it. Sprinkle with bread crumbs, sugar and cheese. Bake in medium oven for 30 minutes.Eggplant recipes,does any one have any?
Olive Garden Eggplant Parmigiana

Ingredients:


1 Eggplant, peeled, sliced 1/4';


Flour


Oil


Seasoned salt


1 pound Spaghetti sauce, meat flavored


1/4 cup Grape jelly


1 14 ounces Can Stewed tomatoes, sliced


4 slices mozzarella cheese


Directions:


1. Moisten eggplant and coat lightly in flour. Quickly brown slices in hot oil, dusting each side generously with seasoned salt. When fork tender and golden brown transfer to jelly roll pan. Cover loosely with foil and bake at 375~ about 20 to 25 minutes or until tender. Use 8 slices for this amount of sauce.


2. SAUCE-Combine sauce, jelly and tomatoes that have been broken up with a fork. Heat on medium until piping hot. Do not boil Be sure jelly is melted. Arrange 2 sl eggplant on each of 4 plates. Cover each with 1 sl of mozzarella. Ladle sauce over all, not to cover completely. Place plates in 375~ oven just to melt cheese and serve promptly.
Slice your eggplant and salt the slices. This draws out the bitter juice. Use an egg wash and Panko breadcrums to fry the slices.





Wash, then remove the thicker stems from one or two bunches of chard or colored chard. Roll and julienne the chard, Slice one red onion, one or two zucchini (also julienne), chop 3 cloves garlic. Saute the onion first adding the zucchini garlic and chard last in that order.





In a baking pan, lay down a layer of homemade marinara sauce, a layer of cooked eggplant, a layer of sauteed veggies, a layer of fresh mozzarella, a layer of sauce. If possible add another layer of each.


Top with fresh Mozzarella and bake at 350 for 30 minutes or until the mixture starts to bubble. Sprinkle with Parmesano-Reggiano and serve. Garnish with the prawns.





While cooking the veggies add 16-20 per pound prawns and cook until pink. Remove the veggies from the pan and add salt/pepper to the prawns.
Eggplant gratin





Ingredients


1 1/2 cups finely chopped white onion


3 tablespoons olive oil


1 1-pound eggplant, cut into 1/2-inch pieces


1/3 cup plus 2 tablespoons minced fresh parsley leaves


1/2 cup freshly grated Parmesan


1/4 cup dry bread crumbs





Method


In a heavy skillet, cook the onion in 2 tablespoons of the oil over moderately low heat, stirring occasionally, until it is golden. While the onion is cooking, in a steamer set over boiling water steam the eggplant, covered, for 10 minutes, or until it is tender, transfer it to a colander, and let it drain 5 minutes. In a bowl toss together the eggplant, the onion mixture, 1/3 cup of the parsley, and the salt and pepper to taste and spread the mixture in a greased 3-cup shallow baking dish. In a small bowl stir together the Parmesan, the bread crumbs, and the remaining 2 tablespoons parsley, sprinkle the mixture over the eggplant mixture, and drizzle the top with the remaining 1 tablespoon oil. Bake the gratin in the middle of a preheated 400掳F. oven for 20 minutes, or until the topping is golden and the mixture is bubbling around the edges.
Eggplant parm is good, easy and delicious. You can also sautee your eggplant and make an olive pesto toss it and serve over pasta.

this doesnt have shrimp in it but its really good.





mix rice and sour cream then lay it in a casserole dish. put a little bit of caymen pepper on the top, then a bit of sugar. layer the top with cheddar cheese. its the best thing ive ever eaten. i dont know exactly how much of each thing you're supposed to put in but i just look at it and measure it myself and it turns out great.
